



| MOM'S FRIED RICE 2 tablespoons finely minced garlic 1/4 cup finely chop scallions 4 tablespoons corn oil 1/2 cup finely sliced pork loin 1/2 cup chopped fresh shrimps, shelled (optional) 2 tablespoons soy sauce 3 tablespoons tomato catsup ( for flavor and color ) Black pepper to taste Salt to taste 2 tablespoons oyster sauce (optional) 5 cups cold cooked rice (refrigerated rice easy to fry) 1 tablespoon sesame oil (optional, I like sesame oil) 2 eggs omelet plain, julienne In a 10 or 12 inch frying pan, fry garlic with 1 tablespoon oil. Add pork Season with soy sauce, oyster sauce, and tomato catsup. Add shrimp cook for about 5 minutes or till shrimp turn lightly pink. Set aside In a clean hot fry pan add oil , rice stirring for about 5 minutes or so, add salt, garlic, black pepper to taste Continue frying and turning for 10 to 20 minutes, blend all ingredients. Add sesame oil,, garnish with eggs omelet and scallions. Serves 8. Note: You can use leftover roast pork, roast beef and roasted chicken for this recipe just add cooked meat the last ten minutes. And you can add vegetables like cooked julienne carrots and beans sprout... ***** Make sure frying pan is hot when you fry the rice or they stick to the pan. ( used pam spray if you wish ) For 2 serving just use 3 cups cooked rice and cut ingredients in half or to taste. |
